Here is a fun lunch to make with children. It offers the opportunity to teach children about measurements and portions.
1 pound ground beef
1 (1.25 ounce) package of taco seasoning mix
36 wanton wrappers
1 (16 ounce) can re-fried beans
36 tortilla chips
2 cups shredded cheddar cheeses
1 jar of salsa
*Optional toppings: cream, diced tomatoes, cilantro, onion
chenille stems or yarn or twine
various circle cereals with holes in the middle
Directions: String cereals onto chenille stem or yarn. Children may find it easier to keep the cereal in place on a chenille stem if you create a loop at one end to prevent the cereal from falling off. Yarn or twine can be knotted at one end to help prevent cereal from falling off as the child strings their bracelet. Once the child has enough cereal in place secure the chenille stem or yarn on their wrist

Banana Pumpkin Muffins
2 large ripe bananas
1/2 cup canned pumpkin
1/2 granulated sugar
1/4 cup milk
1/4 cup applesauce
1 3/4 cups whole wheat flour or all-purpose flour
2 tsp baking powder
1 tsp pumpkin spice
1/2 tsp salt
Directions: Preheat oven to 375. Grease muffin tins with nonstick cooking spray. Puree bananas. Mix bananas, pumpkin, sugar, milk, applesauce, and egg in medium bowl until well blended. Combine flour, baking powder, pumpkin pie spice, and salt in a large bowl. Stir banana mixture into flour mixture just until moistened. Spoon batter into muffin tins, filling 2/3 full. Bake for 20-22 minutes or until wooden toothpick inserted into center comes out clean.
Banana Applesauce Oat Muffins
3 large over-ripe bananas, mashed
3/4 cup packed brown sugar
1/3 cup unsweetened applesauce
1 tsp vanilla extract
1 cup whole wheat flour or all-purpose flour
1/2 tsp baking soda
2 tsp baking powder
1 tsp salt
1 cup quick cooking oats
1 tsp cinnamon (optional)
3/4 cup semi-sweet chocolate chips (optional)
Directions: Preheat oven to 350. Grease muffin tins with nonstick cooking spray. In a large bowl, combine egg, bananas, brown sugar, applesauce, and vanilla. In a medium bowl stir together flour, baking soda, baking powder, salt and cinnamon. Stir the oatmeal into the flour mixture. Gently stir the flour mixture into the banana mixture. Fold in chocolate chips. Spoon batter into muffin tins, filling 2/3 full. Bake for 20-25 minutes.
